Ingredients:
- 1 cup gluten-free all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup milk or dairy-free alternative
- 2 tablespoons vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 cup granulated sugar for coating
- 1 teaspoon ground cinnamon for coating
- 1/2 cup chocolate chips, melted for dipping
Instructions:
In a mixing bowl, combine gluten-free flour, sugar, baking powder, and salt
In another bowl, whisk together milk, vegetable oil, egg, and vanilla extract
Gradually add the wet ingredients to the dry ingredients, stirring until well combined
Preheat your waffle iron according to manufacturer's instructions and lightly grease it
Pour the batter onto the waffle iron and cook until golden brown and crisp
Once cooked, remove the waffle from the iron and let it cool slightly
Cut the waffle into strips resembling churros
In a shallow dish, mix together granulated sugar and ground cinnamon for coating
Roll each waffle strip in the cinnamon sugar mixture until well coated
Melt chocolate chips in the microwave or over a double boiler until smooth
Dip the coated waffle churros into the melted chocolate
Place the chocolate-covered churros on a wire rack to allow the chocolate to set
Serve warm and enjoy!
