This easy coconut curry sauce is perfect for a quick and flavorful vegan dinner. It's creamy, aromatic, and pairs well with vegetables, tofu, or grains.
Ingredients:
- 1 can 13
- 5 oz coconut milk
- 2 tablespoons curry powder
- 1 tablespoon soy sauce or tamari for gluten-free
- 1 tablespoon maple syrup
- 1 tablespoon lime juice
Instructions:
Put curry powder, soy sauce, maple syrup, lime juice, and coconut milk in a saucepan
Mix everything together with a whisk
Over medium-low heat, bring the mixture to a slow boil
Turn down the heat and let it simmer for 5 to 7 minutes, stirring every now and then, until the sauce gets a little thicker
Take the sauce off the heat and use it as a sauce for your favorite vegan meals
