A delicious Greek soup that is perfect for any occasion because it has tender chicken and a lovely lemon flavor.
Ingredients:
- 1 cup cooked shredded chicken
- 8 cups chicken broth
- 1/2 cup orzo pasta
- 3 eggs
- Juice of 2 lemons
- Zest of 1 lemon
- Salt and pepper to taste
- Fresh dill for garnish
Instructions:
In a pot, bring chicken broth to a simmer
Add orzo pasta and cook until tender
In a bowl, whisk together eggs, lemon juice, and lemon zest
Slowly temper the egg mixture with hot broth while whisking constantly
Pour the egg mixture back into the pot, stirring well
Add shredded chicken, salt, and pepper
Simmer for a few more minutes
Serve hot, garnished with fresh dill
