Ingredients:
- 1 lb dried black beans, rinsed and soaked overnight
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 jalapeo pepper, diced seeds removed for less heat, if desired
- 1 can 14
- 5 oz diced tomatoes
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 4 cups vegetable broth
- Salt and pepper to taste
- Fresh cilantro, chopped for garnish
Instructions:
In a slow cooker, combine soaked black beans, diced onion, minced garlic, diced red bell pepper, diced jalapeo pepper, diced tomatoes, chili powder, ground cumin, smoked paprika, dried oregano, and vegetable broth
Stir well to combine all ingredients
Cover and cook on low heat for 7-8 hours or until the beans are tender
Once cooked, season with salt and pepper to taste
Serve hot, garnished with fresh chopped cilantro
