These Crock Pot Beef Carnitas Tacos are a flavorful and easy dish to prepare in your slow cooker. Tender chunks of beef are slow-cooked with aromatic spices and onions until they're juicy and fall-apart tender, perfect for stuffing into tortillas and topping with your favorite garnishes.
Ingredients:
- 3 lbs beef chuck roast, trimmed and cut into chunks
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 can 4 oz diced green chilies
- 1 cup beef broth
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Tortillas, for serving
- Toppings of choice: salsa, avocado, cilantro, lime wedges, etc
Instructions:
In a slow cooker, add beef chunks, chopped onion, minced garlic, diced green chilies, beef broth, chili powder, cumin, oregano, paprika, salt, and pepper
Mix the ingredients together
When the beef is soft enough to shred with a fork, cover and cook on low for 8 to 10 hours or high for 4 to 6 hours
To mix the beef with the cooking juices, shred it with two forks right in the slow cooker after it's done cooking
Put the shredded beef carnitas on warm tortillas and top them with salsa, avocado, cilantro, and lime wedges, if you like
