Ingredients:
- 8 oz 225g of rice noodles
- 1/2 lb 225g of shrimp, peeled and deveined
- 2 cups of mixed vegetables bell peppers, broccoli, carrots, snap peas
- 3 cloves of garlic, minced
- 2 tablespoons of vegetable oil
- 2 tablespoons of soy sauce
- 1 tablespoon of oyster sauce
- 1 teaspoon of sesame oil
- 1/2 teaspoon of red pepper flakes optional
- Salt and pepper to taste
- Chopped green onions and sesame seeds for garnish
Instructions:
Boil rice noodles according to package instructions until al dente, then drain and set aside
In a large wok or skillet, heat vegetable oil over high heat
Add minced garlic and stir-fry for 30 seconds until fragrant
Add shrimp and cook for 2-3 minutes until they turn pink and opaque
Remove and set aside
In the same wok, add more oil if needed, and stir-fry the mixed vegetables for 3-4 minutes until they become tender-crisp
Return the cooked shrimp to the wok and add the drained noodles
Drizzle soy sauce, oyster sauce, and sesame oil over the ingredients
Toss everything together and stir-fry for an additional 2-3 minutes to heat through
If desired, add red pepper flakes for some heat
Season with salt and pepper to taste
Garnish with chopped green onions and sesame seeds
Serve hot and enjoy!
