Avocado and Mango Quinoa Sushi



A delightful twist on traditional sushi, this Avocado and Mango Quinoa Sushi is a colorful and nutritious alternative. The quinoa adds a nutty flavor and fluffy texture, while the creamy avocado and sweet mango bring a burst of freshness.

Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 3 nori seaweed sheets
  • 1 ripe avocado, sliced
  • 1 ripe mango, sliced
  • Soy sauce for dipping
  • Pickled ginger and wasabi for serving

Instructions:

Cook quinoa with water according to package instructions, then let it cool

Place a nori sheet on a bamboo sushi mat, shiny side down

Spread a thin layer of quinoa over the nori sheet, leaving a small border at the top

Arrange avocado and mango slices along the center of the quinoa

Carefully roll the sushi using the bamboo mat, sealing the edge with a bit of water

Slice the roll into bite-sized pieces using a sharp knife

Repeat the process for the remaining nori sheets and ingredients

Serve the quinoa sushi with soy sauce, pickled ginger, and wasabi
