Gluten-Free Vegan Banana Muffins



These vegan banana muffins don't have any gluten and are soft and moist. They taste great with banana. They are great for people who are gluten intolerant or follow a vegan diet because they are made with gfJules' recommended flour blend.

Ingredients:

  • 1 1/2 cups gluten-free flour blend gfJules recommended
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3 ripe bananas, mashed
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1/4 cup non-dairy milk such as almond or soy

Instructions:

Preheat the oven to 350F 175C and line a muffin tin with paper liners

In a large bowl, whisk together the gluten-free flour, baking powder, baking soda, and salt

In another bowl, mix the mashed bananas, maple syrup, coconut oil, vanilla extract, and non-dairy milk until well combined

Pour the wet ingredients into the dry ingredients and stir until just combined

Be careful not to overmix

Divide the batter evenly among the muffin cups, filling each about 3/4 full

Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean

Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely

Vegan Chocolate Truffles - Pam's Daily Dish



Savor the rich, creamy, and delicious vegan chocolate truffles. These delicious, dairy-free treats are ideal for sating your chocolate appetite. Add your preferred toppings to them for a truly unique touch!

Ingredients:

  • 1 cup of vegan dark chocolate chips
  • 1/2 cup of full-fat coconut milk
  • 2 tablespoons of maple syrup
  • 1 teaspoon of vanilla extract
  • 1/4 cup of cocoa powder for coating
  • Optional toppings: crushed nuts, shredded coconut, or cocoa nibs

Instructions:

Put the full-fat coconut milk and vegan dark chocolate chips in a microwave-safe bowl

Microwave the mixture for 20 seconds at a time, stirring after every 20 to ensure that the chocolate melts completely and the mixture becomes smooth

Mix thoroughly after adding the vanilla extract and maple syrup

Once the mixture is firm enough to handle, cover the bowl and place it in the refrigerator for at least two hours

After the mixture cools, take small portions and roll them into bite-sized truffle balls using a spoon or melon baller

Roll each truffle ball in the optional coatings cocoa powder, for example until it is evenly coated in a shallow dish

Transfer the coated truffles to a tray or plate lined with parchment

To set, refrigerate the truffles for an additional thirty minutes

Soft Sponge Aval Dosa



Soft Sponge Aval Dosa is a South Indian crepe made with rice flakes and rice flour. It's a delicious and fluffy dosa that can be enjoyed with various accompaniments.

Ingredients:

  • 1 cup rice flakes aval or poha
  • 1/2 cup rice flour
  • 2 tablespoons grated coconut
  • 1/2 teaspoon cumin seeds
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 cup buttermilk
  • Oil for cooking

Instructions:

For 10 minutes, wash the rice flakes and put them in buttermilk

Soak the rice flakes and then blend them with rice flour, grated coconut, cumin seeds, salt, and baking soda

Mix the ingredients together until the batter is smooth

This will help the batter rise

Give it about 30 minutes to rest

Put a nonstick pan or griddle over medium-low heat and lightly oil it

Put a small amount of the batter on the pan and spread it out into a thin circle

First cook the dosa until the bottom is golden brown

Then turn it over and cook the other side until it's also golden brown

Do it again with the rest of the batter, adding more oil if needed

Put it on the table hot with sambar or chutney of your choice

  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar for coating
  • 1 teaspoon ground cinnamon for coating
  • 1/2 cup chocolate chips, melted for dipping

Instructions:

In a mixing bowl, combine gluten-free flour, sugar, baking powder, and salt

In another bowl, whisk together milk, vegetable oil, egg, and vanilla extract

Gradually add the wet ingredients to the dry ingredients, stirring until well combined

Preheat your waffle iron according to manufacturer's instructions and lightly grease it

Pour the batter onto the waffle iron and cook until golden brown and crisp

Once cooked, remove the waffle from the iron and let it cool slightly

Cut the waffle into strips resembling churros

In a shallow dish, mix together granulated sugar and ground cinnamon for coating

Roll each waffle strip in the cinnamon sugar mixture until well coated

Melt chocolate chips in the microwave or over a double boiler until smooth

Dip the coated waffle churros into the melted chocolate

Place the chocolate-covered churros on a wire rack to allow the chocolate to set

Black Bean Tacos with Avocado Cilantro-Lime Sauce

Ingredients:

  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup corn kernels fresh, frozen, or canned
  • 1 red bell pepper, diced
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce

Instructions:

In a different bowl, mash the avocado and add the chopped cilantro and fresh lime juice

This will make the avocado cilantro-lime sauce

Follow the directions on the package for how to warm the tortillas

Spread some of the black bean mixture on each tortilla before putting the tacos together

Add diced tomatoes, shredded lettuce, and, if you want, shredded cheddar cheese on top

Spread the avocado-cilantro-lime sauce on top of the toppings

Add some fresh cilantro leaves as a garnish

Patriotic Sangria

Ingredients:

  • 1 bottle of dry white wine
  • 1 cup of blueberries
  • 1 cup of strawberries, sliced
  • 1 cup of raspberries
  • 1/4 cup of white rum
  • 1/4 cup of triple sec

Caramel Fudge Squares

Ingredients:

  • 2 cups white chocolate chips
  • 1 cup sweetened condensed milk
  • 1/2 cup caramel sauce
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts optional
  • 1/4 teaspoon salt

Instructions:

Put parchment paper around the edges of an 8x8-inch square baking pan, leaving some overhang to make it easy to take off

Put the white chocolate chips, sweetened condensed milk, caramel sauce, and butter in a bowl that can go in the microwave

Stir the mixture every 30 seconds while heating it in the microwave until it is smooth and well mixed

Add the salt and vanilla extract and mix well

You can add the chopped nuts if you want to
